molten choc cakes


I have been longing to make this molten cake. But seems like its not tat successful, didnt seems to make the chocolate flow out.. hahaha.. well.. since its a first time so its acceptable for myself.
I get the recipe from one of the blogger. How come he/she can make it looks so nice and yummy.. hmm.. so i guess i have to look for another molten choc cake recipe..
recipe is simple... just in case some one wanted to try it and successful.
350g chocolate,melted
4 eggs, beaten
50 g butter
50g sugar
50g all purpose flour
1 tsp vanilla essence
a bit of salt..
1. pre heat the oven at 200 deg cel. Get ready the mould.
2. cream butter and sugar till light and fluffy.
3. add eggs then vanilla then salt, flour and lastly the melted chocolate.
4. scoop into the mould.
5. bake for 8 to 10 minutes. serve warm. top with some icing sugar. looks a bit nicer.. hehe
beat some whipped cream to serve with it...
actually, the pics shows 2 different version.
one bake for longer minutes(more than 10 minutes) and it turn out a bit dry(shown with icing dust on top). hmm.. sort of like super chocolateee muffin..
another one with shorter time (less than 8 minutes) so its more moist... ahh... like chocolate moist cake..
hohoho... a molten chocolate cake becomes muffins and moist cake..
hubby loves the moist version.. wooo...

Sausage n mushroom quiche



Another creation, actually i tried to make quiches before but i bought the crust pastry in the supermarket. As for now, I want to take the challenge to make the pastry myself. Well... its a simple ingredients and a simple ways to make it.

Short crust pastry:

200g flour (sifted) , 100g butter, 3 tbsp cold water

20g butter (for brushing the mould)

Filling:

1 or 2 pcs sausage (shredded),1 big onion(shredded), 3 eggs(whisked), 100ml milk, 3 to 4 pcs wild mushrooms (shredded), cut spinach (boiled)

Method:

1. Mixed the flour and the butter till it resembles bread crumbs. Mix in cold water one spoonful at a time to form dough. Rest for 30 mins before use.

2. Mixed all ingredient for the fillings in one big bowl.

3. Prepare the pastry mould and buttered inside. And press the pastry to the mould, later pour the fillings to it.

4. Bake the quiche in the oven for 25 to 30 mins at 190 deg. cel. till golden brown and cooked.

Mango Cheesecake


Well.. i m back with another cheesecake. Reasons for that, wat else, baked cheesecake is easier to make.. less stressful.. just make the base wit digestive biscuits and blend all the stuff in the pot, i was actually eyeing on the mango mousse cake recipe but i dun have the time yet.. as it take more time and energy to make it, also its not a mango season. I'm making this cheesecake with a bought mango which is so expensive. hopefully its nice. Hey, I just baked it so its takes time to cool down. :) and only get to try it tomorrow. Just have to keep my finger cross. I just feel like sharing this recipe and also for my future reference, in case my recipe book got lost. haha.. yah, i know the pics looks like chocolate cake more than mango.. haha... well.. wat to do... just loves chocolate too much...
Ingredient
Cake base
200g Digestive biscuit
100g melted butter
Filling
500g cream cheese
120g sugar
30g corn flour
1 tbsp lemon juice
1 lemon zest, grated
150g mango
3 eggs
150g whipping cream
Decoration(optional)
melted chocolate... hehe.. just dun know wat else to use...
Method:
1. Finely crush the digestive biscuit and add the melted butter. Mixed it together. And start to press the biscuit on the 22cm springform tin. refreigerate for 20 to 30 minutes.
2. Put the cream cheese, sugar and cornflour in the cake mixer till light and smooth.
3. Blend the mango, lemon zest and the lemon juice. (it will turn into mangor puree)
4. Add the mango puree to the cream cheese till well blended.
5. Add the eggs one at a time and cream till smooth.
6. Add the whipping cream to cream cheese mixture till well combined.Pour the cheese filling over the prepared biscuit base.
7. Bake for 160 deg. cel. for 60 to 70 minutes or till firm.
8. Remove the cake from the oven and let the cake to cool. Refrigerate for 5 hours or overnite.
9. As for the topping.. its optional... u can decorate it with anything of your liking.

steamed milk wit ginger juice


I have been very lazy recently, didnt make something different. But everyday i went online in the office during lunch hour..hehe.. and thinking wat can i make next.. this or that but end up nothing. And just yesterday, I my finger just google this steamed milk with ginger juice. I ever tried this in Hong Kong, and find it really different and wat does it mean by "chong nai" -pour milk. And here there are. my new recipe.. its nice.. heheh.. if a person who dun like milk n ginger, dun bother trying it... recipe here i come,.. super simple..
this is portion for one person, a bowl of steamed milk.

Ingredient
250ml milk
1tbsp sugar
1tsp ginger juice

Direction:
1. Squeeze some ginger juice out... pound it.. or maybe use a garlic press to make the ginger juice out. A very small portion of juice only.
2.heat the milk and dissolve the sugar to taste... tried to pour the hot milk into a different bowl and then back, repeat a few times.
3.pour the milk into the bowl with ginger juice.
4.prepare a pot of boiling water in a pot and placed the bowl of milk with ginger juice and steamed for 30 minutes.

applepie cheesecake




another trial of making cheesecake.. this is apple pie cheesecake. well if u like apple this is nice...

here comes the recipe


Base:

120g digestive biscuits

65g butter, melted


apple pie cheese filling:

250g softened cream cheese

50g castor sugar

15g custard powder

2 eggs

2 egg yolks

80g dairy whipping cream

1/2 tbsp lemon juice


method:

1. crush the biscuits into crumbs mix with melted butter until well combined and press onto the base of the baking tin.

2. arrange sliced apple on top of the crust.

3. apple pie cheese filling: put all ingredient into a blender and blend till smooth. pour onto sliced apple and bake for 170 deg. cel. for 40 minutes, or till center is set.

4. let cake cool in the oven with heat off for 1 hour. chill in the fridge for 6 hours or overnight before serving.

My first cookies making-almond chocolate chip cookies

searching for the cookies recipe.. but not understanding wat is baking soda and wat is shortening. so the chance of making the cokies have been delayed for a long long while. went to the supermarket and planned to buy some stuff and come across the "cookies press" its kind of cute though and not too expensive.. so trying my luck, i bought the press thingy and in it, there have a simple cookies recipe. so without thinking too much, i bought the ingredient and bake it at home. and waa lahh.. almond and chocolate chip cookies. and this recipe dun required baking soda and shortening, which is good for me, as i dun have to scratch my head how to work on it. and i make some changes on the recipe, well for trial... here come the recipe
servings : hmm.... unpredictable... depends on the size u make

almond biscuits
200g butter or margarine (room temperature)
100g sugar (castor)
2 eggs
200g flour (plain or all purpose flour)
200g finely blended almond (powdered)

toppings: (depends on your liking... more almond nuts or more chocolate chips)- mixed together in a bowl
some grounded or chopped almond nuts
chocolate chip

methods:
1. cream the butter and sugar together.
2. add eggs and flavouring.
3. sieve in flour and mix the remaining ingredients a little at a time until a soft dough achieved.
4. put the dough in a sandwich bag and cut a small hole at the tip and press the dough out and form the biscuit on a chilled baking tray and add toppings, also lightly press the topping to the soft dough.
5. bake in a pre-heated oven at 200 deg. cel. for approx. 10 to 15 minutes.


the cookies looks nice, my hubby and my father in law says its nice. so happy baking...

Banana Walnut cheesecake


I only get to eat a very nice walnut cheesecake in Bandar, and can says i only tried it twice, y? cos is very expensive for one slice. and I dun always hav the chance to go there as hubby dun allow.. haha.. well one thing.. to costly and second too fattening for a slice.
and very recently, i found a walnut cheesecake recipe and its so fantastic. but now its all gone.. well.. sharing is caring, i treat my fren this new make cake.. thank goodness it set and is in one piece and not a puree form.. and i m so impressed with myself. but hubby says i cannot do it too often.. haha.. well .. here goes.. the recipe... so easy ..
Ingredients
Base:
185g digestive biscuit
100g melted butter
Filling :
2 eggs
1 handful chopped walnut
1/4 cup blended walnut
500g cream cheese, softened
1/2 cup caster sugar
1/2 cup mashed banana
Method:
Base
crush the biscuit in a blender till fine crumbs. add melted butter in and mix well. press mixture into the 23cm springform cake tin. bake for 15 minutes at 180 deg. cel.
Filling
1. Beat cream cheese, caster sugar and add in mashed banana on medium speed till well blended.
2. Add egg one at a time. mix well till creamy and add in blended walnut and the chopped walnut.
3.pour mixture over biscuit base.
4. Bake at 180 deg. cel. for 40 to 50 minutes. turn off oven and leave the door ajar for the cake to cool for 30 minutes. remove from oven and loose the side of the cake tin. let it cool in room temperature.
well, i will definitely make this cake again. cos i loves it so much.. so much yummier than the other cheesecake i make.
