I kind of having a very tiring weekend especially today. As Doreen is kind enough to bring me to the city to see a 'g' doc and have a check up. And we two have been spending money none stop.. looking for some scrapbooking stuff, clothes, baking stuffs... woooww.. really make full use of the day and reach back home around 5pm. I planned to take a rest after the whole day trip but Doreen saw my recipe books hanging here and there around the living room and she feels like makin something and I asked her wat she wants to make.. she named so much but I dun have the ingredient. So I say why not make cookies and asked to choose something to make and she chose the chocolated chip walnut cookies.. she says she wants to take a bath before doing it so I just went to the kitchen and get ready all the ingredients.. while I was waiting for her, I flipped the pages and the Bourbon biscuit caught my attention. Its soo simple and I really feel like making the cookies using the pastry/cookies cutter. hehe.. so end up Doreen making the chocolate chip with walnuts cookies and I make the Bourbon biscuit... end result.. perfect... always give credit to our own.. especially Doreen, as this is the first time she make this type of cookies...
I will only type in the recipe for the bourbon biscuits as I already have a chocolate chip recipe typed in way back...
Ingredients:
(A)
150g plain flour (sifted)
25g corn flour(sifted)
20g cocoa
(B)
100g butter/margarine (I used butter)
100g sugar (can lessen abit)
(C)
1 egg yolk
1tsp vanilla essence
(D)
decoration:
chocolate chip / chocolate rice

Method:
1. Mix all ingredients (A) in a bowl.
2. Beat ingredient (B) well or till fluffy.
3. Add egg yolk and vanilla essence. Continue to mix it for another minutes or so.
4. Mix (A) and (B).
5. Form a dough. Roll to 3mm or 5mm thick. Cut into any shape you like with a pastry/cookies cutter.
6. Put on greased tray. Prick with fork to prevent the biscuit from rising.
7. Sprinkle chocolate chip on the top.
8. Bake in oven at 175 to 180 deg. cel. for 15 to 20 minutes.
9. Let the cookies and biscuits cool down before putting it in the containers

I have been flipping and flipping the pages of the recipe books for hours... nah.. more like days.. and trying to find something simple and bake. Cupcakes is running in my head but i dun wan to make with those cream frosting or cream cheese frosting. Reasons... heheh.. to lazy to wait for the cream cheese to melt. So wasting time and alot of hand work as I dun feel like using the cake mixer to do it.. sometimes its more fun to do it with hand whisk.. as for this cupcakes... the fun is i broke the hand whisk.. hahaha.. I was like ohh nooo.. hahah.. i need to buy a new one again... well this taught me a lesson.. dun buy cheap stuff. I will need to buy it tomolo.. well.. here is the cheese cupcake recipe...
Ingredient
(A)
3 eggs
3 egg yolks
180g sugar
pinch of salt
(B)
1/4 tsp vanilla essence
(C)
165g flour
1tsp baking powder
(D)
60g milk
65g Cheddar cheese, grated
(E)
70g corn oil or melted butter
(F)
some Cheddar cheese
Method:
1. Place the paper cup in the muffins tray.
2. whip(A) unilt light and fluffy. Add(B) and mix well.
3. Fold in (C) and mix till well blended.
4. cook(D) until the cheese melts. Add(D) then (E). Mix until well combined.
5. Pour it into the prepared mould and sprinkle some (F) on top.
6. Bake at 200 deg. cel. for 18 to 20 minutes or until firm and golden brown. Remove from oven and unmould.
7. Let it cool and dust some icing sugar.

chicken "kiev" and baked potatoes(with cheese and ham)


oh.. i just noticed its my november creation.. not bad not bad.. hehe. I have been thinking and thinking of wat to make for dinner. And I went shopping in the supermarket.. wat to buy, wat to make and wat to cook. Have been holding the basket and walked past the vege area and think.. maybe eggplant but it looks crap.. so i have been standing at the same spots for minutes.. should i buy or should i not... gosh.. making a simple meal for two of us really headache. Then i go round n round.. finally, i bought chicken, ham, sausage, cheese and potatoes... ok.. decided making so called chicken kiev and baked potatoes..
its a simple dish to my standard... just used my imagination mixing tis n mixing tat, add this and add tat.. rolled here and there and taa daaahhh.. a dinner for two.
the baked potatoes, I just make a boiled for it and cut the top and scooped the inside of the potatoes and mashed it with some salt, butter, pepper. And after all the smashing, I just scooped it back to the potatoes and make a baked for 10 to 15 mins...
hehe.. no recipe can be given as it is all just a pinch of this and that... just try it for your own.. who knows it might surprise urself..

Almond Flakes Crisp





Its kinda disappointed. As this is not what I want it to turned out to be. I was watching this Cooking vcd and I am so excited about it but the outcome... hhmm.... but its crispy still and it have a strong aroma. Any how... I will try that again next time... till i get wat I want.. Never give up... Heres the recipe... I was thinking was serving it with the ice cream.. hehe.. but not tonite..

Ingredient:

2 egg whites

100g castor sugar

1/4 tsp vanilla essence

50g plain flour

100g almond flakes

25g melted butter

Method:

1. combine egg white and sugar and lightly whisk it.

2. add the sifted plain flour and stir

3. add vanilla essence, then the almond flakes and stir again.

4. lastly, add in the melted butter. Let the batter rest for an hour.

5. on a tray place the parchment paper and brush some oil on it to prevent the batter sticking on the paper and later spread the batter as thinly as possible.

6. bake in the oven for 15 mins on 200 deg. cel. and later let it cool and start munching it.

Red velvet Cupcakes with cream cheese frosting






Oh... my 1st oct baking. haaiizzz... so fun, so tiring, so worth it. F have been sendin me this recipe and saying his frens would like me to try this cupcake recipe. I was like .. eehh..... OK... as I thought cup cakes and muffin is almost the same... so I just didnt bother much at all. Just last week, F is saying his fren requested me to do it for their hari raya mini potluck... I was a bit lazy tat time cos i have church service for the thurs and fri and weekend going to Miri for opne house and Sunday having wedding dinner... I was like .. Gosh. do I have the time. But there goes... Fri nite after my service, I told F , I want to try to make it now. So i make my first batch. with ugly frosting.... and my second trial, it on sunday afternoon after my trip from Miri, and I spend more time on the frosting.. and some weird patterns have been created. hahaa... the most impt thing is to make sure the person eating it is enjoying... I m proud to says there all like it... so i m satisfied. here comes the recipe..


Ingredient:
1 1/2 cups of sugar
1/2 cup of butter, room temperature
2 eggs, room temp.
2 1/3 cups of cake flour
2 tbsp of cocoa powder
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup of buttermilk
1 tbsp red colouring
1 tsp vanilla extract
1 tsp distilled white vinegar

Method:
1. pre heat oven to 180 deg. cel.
2. beat the butter and sugar in the cake mixer for 3 minutes on medium speed until light and fluffy.
3.add the egg one at a time, beat until each is fully incorporated. be sure to scrape the sides of the bowl to have even mixing.
4.In a large bowl, sift together the cake flour, cocoa powder, baking soda, baking powder, and salt.
5. In another bowl, whisk together the buttermilk, vinegar, vanilla extract and red food colouring.
6. Add 1/4 of the dry ingredients to the egg batter and mix, then add 1/3 of the wet ingredient. continue adding dry, wet and ending with the dry ingredient.
7. scoop into the cupcakes papers, about 1/2 or 3/ full.
8. Bake for 18-22 minutes or until a toothpick come out dry n clean. Rotate the pan after 15 minutes to ensure even baking.
9. Allow to cool for few minutes in the pan then put on the wire rack to cool completely. Makes about 15 to 18 muffins size cupcakes.


Frosting ingredient;
1/2 cup butter
250g cream cheese
1 1/2 cup icing sugar
1 tsp vanilla extract

Method
1. Cream the butter and the cream cheese together, using the cake mixer and hand mixer for few minutes till it incorporated. scrape down the side for even mixing.
2. add the vanilla extract.
3. add the icing sugar, pipe onto the cooled cupcakes.

steamed tofu with minced chicken

Its a healthy dish... chix breast meat being minced and japanese tofu.
simple dish and a simple recipe.

Ingredient:
2 rolls of japanese tofu (if possible, use tofu without egg)

300g minced chicken
1 big clove of garlic (chopped)
1 big onion (chopped)
50g shredded carrot
1 tsp salt
a dashed of pepper
1 tsp sesame oil

1 tsp cornstarch


method:
1. cut the tofu to few pieces and lay on the glass/ceramic plate.
2. mixed all the chicken, garlic, onion, carrot, salt, pepper and sesame oil. All these ingrdient mix in a big bowl. and lastly add on the cornstarch.
3. get a piece of tofu and place the chicken mix on top of the tofu (shown on the 1st picture) and continue doin it and placed the tofu side by side.
4. steam the tofu on medium heat for 20 to 30 mins. And its ready to serve.

the black black thingy on top of the dish is fried onion. i think its overy cooked... hehe...





so called buffalo wings


seriously, i really need to learn how to take a good pictures.. hahah... how come when i see this picture in the digi cam , it looks so mouth watering.. after loading it. gosh.. wat happen... argghh.. hahhaa..
well.. there is no recipe for this buffalo wings tat i make.. reason.. simple.. i cheated.. haha.. i actually bought the buffalo wing powder in the supermarket and just mixed it with the wings... i m such a cheater... but the wings tasted so so so good... um... i think i still have half a pack of the powder left..
just to share the picture only. I believed I have been checking out the recipe of buffalo wings, guess I dun seems to find the ingredient in the supermarket or maybe I m too lazy to look for it.. just plain lazy.. haha.. tats it.. i m a cheater and a lazy person.. gosh...

chicken shepherd's pie


I wonder this considered as chicken shepherd's pie or not.. it dont look attractive enough. Hmm... better improved my phototaking skill.. hehe...
Actually, I have requested a DJ Marilyn from pilihan fm to send me the recipe. hahaha.. tats was cool.. really thank her for that but i didnt fully follow her recipe.. just add and deduct some ingredient.. tats is called creative ya.. hehe
here comes the recipe.
Ingredient:
A)
3 to 4 potatoes (boiled and mashed)
B)
1tsp olive oil
1pc onion (chopped)
2 clove garlic (chopped)
250g minced chicken
100g white button mushroom (chopped)
1tsp sesame oil
1/2 tsp of soya sauce
a dashed of pepper
a dashed of salt
1 tbsp cornstarch
C)
100g cheddar cheese (shredded) or mozzarella cheese.
Methods:
1. boiled the potatoes till very soft and later mashed it.
2. line one layer of mashed potato on the casserole.
3. Pre-heat the oven to 180 deg. cel.
4. Heat oil in a saucepan, add in garlic and onion, stir-fry it, add minced chicken till half cooked. Add in button mushroom, sesame oil, soya sauce, pepper and salt. stirred the chicken mixture till cooked. if too watery add in cornstarch to thicken it.
5. spread the chicken mixture on the 1st layer of mashed potatoes. Top the remainin potatoes on the mixture.
6. drizzle the shredded cheese on the top and baked in the oven for 20 mins on 180 deg. cel.

carrot cake





I have been very busy packing up for the new house.. just thinking, i wont be having any time to bake anything. But my mind keeping thinking abt the carrot cake recipe tat i have just print out from office and its in my office bag. So I was checking out the fridge, and wah lah.. carrot at the edge of the fridge.. haha.. and i was digging out all the ingredient needed for the carrot cake. And I was lazy to fix the cake mixer.. so i just hand whisk.. yes.. manually.. hahahaha.. i m at the super lazy stage but still wanna bake it.. Planned to use half of the ingredient, but my mind is half functioning, end up using the complete ingredient.. so was thinking.. wat the heck.. just go ahead and try an error. here are my recipe...


Ingredient:

2 cups of flour (i used cake flour) but i think best is use all -purpose flour

2 tsp baking powder

1 1./2 tsp cinnamon powder

2 tsp salt

2 tsp bicarbonate soda

2 cup brown sugar


1 cup oil

4 eggs


1 cup chopped walnuts

3 cup grated carrot


Directions:

Mix dry ingredient; add oil and blend. Add one egg at a time and keep on mixing with my spactula. Add carrots and nuts and mixed all together. Rub some butter on the cake pan ( i used a rectangular size - 13X9) or round pan..

bake for 45 minutes at 170 deg cel. Take out from the oven. let it cool and cut in half before putting the cream cheese frosting.


cream cheese frosting :

1 pack of cream cheese-25og (at room temperature)

1/2 cup whipped cream

1/4 cup icing sugar

2 tsp vanilla


Mix all ingredient together till smooth and spread on the cooled cake. can sprinkle some more nuts on it to make it more crunchier..


hubby is the guinea pig.. so watever i bake, He will be the one who tried it first.. he likes it.. hehe.. worth the tryin then..

Apple strudel with custard






I have been longing to make this apple strudel for ages... got the recipe from online but there is no simple recipe for the puff pastry. There using Filo sheet which i dun really know wat that is and I think its not selling in Brunei. So I have to google alot of puff pastry recipe.. there are some simple recipe but not detail enuff. And quite recently I bot the recipe book of Agnes and there is this pics demo of the puff pastry... but still its not enuf detail for me and then watching AFC, the show "sugar" host by anna is superb... she can make the puff pastry making so easy. And today, I have to dare myself to make it. Everything have to be done step by step and I make a messed in my kitchen. I m so happy that I done it. After hubby trying the 1st piece, he asked me to call my frens to come over and try it. They like it. So I m satisfied with my baking. But I think I wont start making the dessert for the time being.... too much of a work..


Puff Pastry Ingredients:

240g flour(all purpose), pinch of salt (sifted togehter)

50g butter

1tsp lemon juice mixed with 150ml cold water

180g pastry margarine (i used butter)


Method:

1. place flour and salt in a mixing bowl. rub the butter until it resembles bread crumb

2. add in lemon juice and water, knead for 5 minutes till it form a smooth dough. (i just love the touch of the dough.. so soft)

3. cover with cloth or maybe use the cling wrap to cover it and place to the refrigerator for 30 mins.

4. roll out the dough into 1 cm thick. rolled it to a cross shape (+) so that u can place the pastry margarine or the butter in between. cover the pastry margarine or butter with the dough. Make sure its fully sealed up if not the butter will spill out.

5. Start to roll the dough with the rolling pin to an oblong shape. (start with the center then slow rolled up then rolled downward). After rolling, make a 1/3 fold at both ends so it will form 3 layers. Use a cling wrap and chilled it for 15 mins.

6. Bring out and rolled the dough again with the same 1/3 fold and bring to chill for another 15 mins. the reason for chilling again and again is because the butter will melt with our warm hand.

7. Again for the last fold is a bit different. Its a 1/4 fold and it will form 4 layers. Chilled again then ready to be used.

Actually, better choice is go youtube and search for pastry making.. better demonstration.. hahha...

8. B4 baking, bring out the pastry and cut into 3 pcs. and rolled it flat. Place the dough on the buttered baking tray. Bake for 30 mins on 200 deg. cel.


Custard Cream ingredient:

2 egg yolks

1/3 cup sugar (maybe can lessen a bit)
2 tbspn plain flour

1 cup milk

1/2 tsp vanilla essence

1 tbsp melted butter


method:

1. mix egg yolk and sugar in a pot till creamy.

2. sift in the flour mix well.

3. add warm milk into mixture and stir well.

4. place pot on low heat and stir the mixture continuously. add in vanilla and continue stiring till thickens.

5. remove the pot from the heat and stir in the melted butter.

6. cool the custard cream in the refrigerator to let it thicken.


Apple filling ingredient:

3 apples

35g butter

90g castor suar

3 tbsp blended almond

half a lemon juice and lemon zest

1 tsp corn flour


method:

1. slice or cube the the apple.

2. heat the pan and add the butter and let it melt. add the apples and stir till the apple coated with butter. Allow the apple to be cooked about 7 to 10 minutes. stirred continuously.

3. in a small bowl, mixed the corn flour, lemon juice and zest.

4. once the apples cooked, stir in sugar and continue stirring till the sugar melted.

5. add the almonds and continue strring for a few minutes.

6. add the corn flour mixture and stir. allow the sauce to thicken and remove from heat.

7. chilled it b4 using.


Final finishing...

Place one puff pastry on a plate and layered with the apple filling (i whipped some cream and layered it b4 placing the apple), then place the 2nd pastry and layered with the custard and place the last piece of pastry. dust some icing sugar on top.. looks nicer..

molten choc cakes


I have been longing to make this molten cake. But seems like its not tat successful, didnt seems to make the chocolate flow out.. hahaha.. well.. since its a first time so its acceptable for myself.
I get the recipe from one of the blogger. How come he/she can make it looks so nice and yummy.. hmm.. so i guess i have to look for another molten choc cake recipe..
recipe is simple... just in case some one wanted to try it and successful.
350g chocolate,melted
4 eggs, beaten
50 g butter
50g sugar
50g all purpose flour
1 tsp vanilla essence
a bit of salt..
1. pre heat the oven at 200 deg cel. Get ready the mould.
2. cream butter and sugar till light and fluffy.
3. add eggs then vanilla then salt, flour and lastly the melted chocolate.
4. scoop into the mould.
5. bake for 8 to 10 minutes. serve warm. top with some icing sugar. looks a bit nicer.. hehe
beat some whipped cream to serve with it...
actually, the pics shows 2 different version.
one bake for longer minutes(more than 10 minutes) and it turn out a bit dry(shown with icing dust on top). hmm.. sort of like super chocolateee muffin..
another one with shorter time (less than 8 minutes) so its more moist... ahh... like chocolate moist cake..
hohoho... a molten chocolate cake becomes muffins and moist cake..
hubby loves the moist version.. wooo...

Sausage n mushroom quiche



Another creation, actually i tried to make quiches before but i bought the crust pastry in the supermarket. As for now, I want to take the challenge to make the pastry myself. Well... its a simple ingredients and a simple ways to make it.

Short crust pastry:

200g flour (sifted) , 100g butter, 3 tbsp cold water

20g butter (for brushing the mould)

Filling:

1 or 2 pcs sausage (shredded),1 big onion(shredded), 3 eggs(whisked), 100ml milk, 3 to 4 pcs wild mushrooms (shredded), cut spinach (boiled)

Method:

1. Mixed the flour and the butter till it resembles bread crumbs. Mix in cold water one spoonful at a time to form dough. Rest for 30 mins before use.

2. Mixed all ingredient for the fillings in one big bowl.

3. Prepare the pastry mould and buttered inside. And press the pastry to the mould, later pour the fillings to it.

4. Bake the quiche in the oven for 25 to 30 mins at 190 deg. cel. till golden brown and cooked.

Mango Cheesecake


Well.. i m back with another cheesecake. Reasons for that, wat else, baked cheesecake is easier to make.. less stressful.. just make the base wit digestive biscuits and blend all the stuff in the pot, i was actually eyeing on the mango mousse cake recipe but i dun have the time yet.. as it take more time and energy to make it, also its not a mango season. I'm making this cheesecake with a bought mango which is so expensive. hopefully its nice. Hey, I just baked it so its takes time to cool down. :) and only get to try it tomorrow. Just have to keep my finger cross. I just feel like sharing this recipe and also for my future reference, in case my recipe book got lost. haha.. yah, i know the pics looks like chocolate cake more than mango.. haha... well.. wat to do... just loves chocolate too much...
Ingredient
Cake base
200g Digestive biscuit
100g melted butter
Filling
500g cream cheese
120g sugar
30g corn flour
1 tbsp lemon juice
1 lemon zest, grated
150g mango
3 eggs
150g whipping cream
Decoration(optional)
melted chocolate... hehe.. just dun know wat else to use...
Method:
1. Finely crush the digestive biscuit and add the melted butter. Mixed it together. And start to press the biscuit on the 22cm springform tin. refreigerate for 20 to 30 minutes.
2. Put the cream cheese, sugar and cornflour in the cake mixer till light and smooth.
3. Blend the mango, lemon zest and the lemon juice. (it will turn into mangor puree)
4. Add the mango puree to the cream cheese till well blended.
5. Add the eggs one at a time and cream till smooth.
6. Add the whipping cream to cream cheese mixture till well combined.Pour the cheese filling over the prepared biscuit base.
7. Bake for 160 deg. cel. for 60 to 70 minutes or till firm.
8. Remove the cake from the oven and let the cake to cool. Refrigerate for 5 hours or overnite.
9. As for the topping.. its optional... u can decorate it with anything of your liking.

steamed milk wit ginger juice


I have been very lazy recently, didnt make something different. But everyday i went online in the office during lunch hour..hehe.. and thinking wat can i make next.. this or that but end up nothing. And just yesterday, I my finger just google this steamed milk with ginger juice. I ever tried this in Hong Kong, and find it really different and wat does it mean by "chong nai" -pour milk. And here there are. my new recipe.. its nice.. heheh.. if a person who dun like milk n ginger, dun bother trying it... recipe here i come,.. super simple..
this is portion for one person, a bowl of steamed milk.

Ingredient
250ml milk
1tbsp sugar
1tsp ginger juice

Direction:
1. Squeeze some ginger juice out... pound it.. or maybe use a garlic press to make the ginger juice out. A very small portion of juice only.
2.heat the milk and dissolve the sugar to taste... tried to pour the hot milk into a different bowl and then back, repeat a few times.
3.pour the milk into the bowl with ginger juice.
4.prepare a pot of boiling water in a pot and placed the bowl of milk with ginger juice and steamed for 30 minutes.

applepie cheesecake




another trial of making cheesecake.. this is apple pie cheesecake. well if u like apple this is nice...

here comes the recipe


Base:

120g digestive biscuits

65g butter, melted


apple pie cheese filling:

250g softened cream cheese

50g castor sugar

15g custard powder

2 eggs

2 egg yolks

80g dairy whipping cream

1/2 tbsp lemon juice


method:

1. crush the biscuits into crumbs mix with melted butter until well combined and press onto the base of the baking tin.

2. arrange sliced apple on top of the crust.

3. apple pie cheese filling: put all ingredient into a blender and blend till smooth. pour onto sliced apple and bake for 170 deg. cel. for 40 minutes, or till center is set.

4. let cake cool in the oven with heat off for 1 hour. chill in the fridge for 6 hours or overnight before serving.

My first cookies making-almond chocolate chip cookies

searching for the cookies recipe.. but not understanding wat is baking soda and wat is shortening. so the chance of making the cokies have been delayed for a long long while. went to the supermarket and planned to buy some stuff and come across the "cookies press" its kind of cute though and not too expensive.. so trying my luck, i bought the press thingy and in it, there have a simple cookies recipe. so without thinking too much, i bought the ingredient and bake it at home. and waa lahh.. almond and chocolate chip cookies. and this recipe dun required baking soda and shortening, which is good for me, as i dun have to scratch my head how to work on it. and i make some changes on the recipe, well for trial... here come the recipe
servings : hmm.... unpredictable... depends on the size u make

almond biscuits
200g butter or margarine (room temperature)
100g sugar (castor)
2 eggs
200g flour (plain or all purpose flour)
200g finely blended almond (powdered)

toppings: (depends on your liking... more almond nuts or more chocolate chips)- mixed together in a bowl
some grounded or chopped almond nuts
chocolate chip

methods:
1. cream the butter and sugar together.
2. add eggs and flavouring.
3. sieve in flour and mix the remaining ingredients a little at a time until a soft dough achieved.
4. put the dough in a sandwich bag and cut a small hole at the tip and press the dough out and form the biscuit on a chilled baking tray and add toppings, also lightly press the topping to the soft dough.
5. bake in a pre-heated oven at 200 deg. cel. for approx. 10 to 15 minutes.


the cookies looks nice, my hubby and my father in law says its nice. so happy baking...

I only get to eat a very nice walnut cheesecake in Bandar, and can says i only tried it twice, y? cos is very expensive for one slice. and I dun always hav the chance to go there as hubby dun allow.. haha.. well one thing.. to costly and second too fattening for a slice.
and very recently, i found a walnut cheesecake recipe and its so fantastic. but now its all gone.. well.. sharing is caring, i treat my fren this new make cake.. thank goodness it set and is in one piece and not a puree form.. and i m so impressed with myself. but hubby says i cannot do it too often.. haha.. well .. here goes.. the recipe... so easy ..
Ingredients
Base:
185g digestive biscuit
100g melted butter
Filling :
2 eggs
1 handful chopped walnut
1/4 cup blended walnut
500g cream cheese, softened
1/2 cup caster sugar
1/2 cup mashed banana
Method:
Base
crush the biscuit in a blender till fine crumbs. add melted butter in and mix well. press mixture into the 23cm springform cake tin. bake for 15 minutes at 180 deg. cel.
Filling
1. Beat cream cheese, caster sugar and add in mashed banana on medium speed till well blended.
2. Add egg one at a time. mix well till creamy and add in blended walnut and the chopped walnut.
3.pour mixture over biscuit base.
4. Bake at 180 deg. cel. for 40 to 50 minutes. turn off oven and leave the door ajar for the cake to cool for 30 minutes. remove from oven and loose the side of the cake tin. let it cool in room temperature.
well, i will definitely make this cake again. cos i loves it so much.. so much yummier than the other cheesecake i make.

Muffins



Another simple recipe but for making muffins. I like to make this muffins as it dun need to much work and time. and better yet no need to use any cake mixer. As per the recipe its suppose to make a simple chocolate chip with cream cheese muffins. and i did tried it but the taste is not as good and strong flavouring.
and i second time i make two different types of muffins at one go. haha... just to save some times.. and i tried more flavour, the other is with peanut butter center filling.. yumm..

Ingredient
A:
2 eggs
80g caster sugar

B:
175g plain flour
1 tsp baking powder
1/4 tsp salt

for chocolate muffin - use melted chocolate (2 tbsp) or 1 tbsp of cocoa powder, mixed in
OR
for blueberry muffin - use 2tbsp of blueberry jam, mixed in


C:
60g fresh milk
65g melted butter

Filling (mixed)
100g cream cheese
1.5 tbsp caster sugar
OR
melted peanut butter (crunchy)

some chocolate chips (for topping)

Method :
1. Beat ingredient A until light n fluffy. slowly add in B and mix well.
2. Pour in milk and mix well. lastly stir in butter.
3. Spoon 2 tbsp batter on to a aluminium muffin cup, add in cheese fillin and cover with batter. sprinkle some chocolate chips on the top
4. bake for 180 deg. cel. for 20 to 30 minutes until cooked. use a thin wooden stick (satay stick) to poke in the center of the mufin. just to make sure the center is not sticky. after that remove from the oven.

Banana cheesecake

Months ago, my hubby n i went down to miri for shopping. well.. its nice trip and of cos we drop by to Popular Bookshop to buy some magazines. As usual, i will go hang around the recipe book section. and i found a so called magazines cum recipe book. I was flippin the book and saw this banana cheesecake recipe and i find it quite interesting. and weeks later i tried to baked the cake.. the recipe is very simple and i m so happy i get to make it but a waste is tat i forgot to take a pic of the outcome... but anyhow.. just in case i lost my recipe book i still can check it out here..

Banana biscuit crust:
160g banana sandwich biscuits (any type) or maybe digestive biscuits
120g melted unsalted butter

crust the biscuits into crumbs, if possible use a blender or maybe a rolling pin, add the butter and mix well. press it on a 6" or 7" loose base tin and chill in the fridge for and hour or till firm.

Banana cheese fillings :

500g softened cream cheese
125g caster sugar
2 eggs
1.5 tbsp corn flour
100g banana. mashed it, mixed in
1/4 tsp banana essence

1. Beat cream cheese and caster sugar at low speed until smooth. Add in eggs one by one and mix well.
2. Add in corn flour and mix well,. Lastly mix in mashed banana.
3. Pour cheese mixture onto crust and bake at 170 deg. cel. for 40 to 50 minutes or until center is set.
4. let cake cool in the oven wit the door ajar for an hour. chill in the fridge for 6 hours or overnite.


believe me, if u like banana and cheesecake, u will like to try this...

Custard puff


I have been searching for a long time to get the right recipe for the custard puff.. even bought a recipe book but still its not the one that i wanted.
and recently i have been goin online quite often and went to google the creamy custard puff recipe. anyhow i have the recipe and i tried to make it. and here comes the recipe and the outcome of the creamy custard puff. I believe tat alot of pple will know how to make this simple yet nice custard puff. But patient is always the key to making anything out..
Creamy Custard Puff
200ml water
150gm butter
125gm flour (plain)
4 eggs
1/2 tsp salt
1. Heat water, salt and butter to boil; reduce heat. stir in flour and stir vigorously over low heat until mixture forms in a ball/ thick paste.
2. Remove from heat. Beat in eggs; continue beating until smooth. let it cool for a short while.
3. heat oven 200 deg. cel.
4. either use a tbsp to scoop the batter and put on the ungreased cookie sheet on the oven tray OR scoop the batter into the sandwich plastic bag and cut a small hole on the tip of the bag and squeeze the batter out in a cicular motion. make sure ther is 2 inch space between each puff batter.
5. bake puffs until there are puffed up and golden brown, 30 to 40 minutes. cool it on top of the iron rack..
6. slit the puff halfway and put in the custard filling. (recipe below)
Custard fillings
3 egg yolks
100gm sugar or lesser
750ml milk (low fat)
20gm flour (plain)
20gm cornstarch
1/2tsp vanilla (can put more if u like the flavour to be stronger)
1. Beat yolk and sugar until white. Pour in milk bit by bit while mixing until sugar is melted.
2. Put in flour, cornstarch, vanilla and mixed till smooth.
3. cook over medium heat, stir continuosly till mixture boils and thicken.
4. cool before putting into puffs.

simple pancakes



a very simple pancake. I make it months ago... just forgot to blog in here.. its never too late... hehe..


Ingredient:

2 cup flour

1/4 cup sugar

1/2 cup water

1/2 cup milk (skimmed.. pls)

some cooking oil


Mix all ingredient together. It just that simple.

Get ready a frying pan. use small fire. Add a small portion of oil to cover part of the base.

And scoop a small portion of the batter on the frying pan. Wait till the upper part of the batter show some bubble then flipped over and let it cook for a minute. That's it. Simple.


Topping:

1 or 2 scoops of ice cream

OR

Whipped some cream

OR

Strawberry Jam

OR

Nutella spread - chocolate spread



just amazing.. haha.. but if only u have a sweet tooth then u put everythin u can find... :)
